| Betz Family Processing is a second-generation butcher shop in Dubois County, Ind. Working alongside his wife Bonnie and their two children, Wayne, 12, and Shelby, 16, Allen Betz is one of the few remaining butchers who works full time, processing everything from deer to hogs at his business in Schnellville and on local farms around the county. Shelby Betz waits for instructions from her father Allen Betz before cutting into the beef halves they have just butchered. Shelby often helps her father butcher, and is as accomplished as many of the men who work alongside of her. |
